The chocolate is all tempered by hand and then hand-ladled into the molds. The large (grand) adventure bar molds sit on a scale as I'm ladling. If you have ever hand tempered chocolate, you'll already know there isn't a lot of time to dilly-dally once the chocolate is tempered. Once the chocolate is in the mold, it is not going to happily or nicely come back out again if I have over-filled the molds – even slightly. (Under-fill is no problem on the bars because I can add to it). So with this very hands-on old fashioned method, the weight can vary slightly between bars. But the good news for you is, if the weight is not exact, then it's more chocolate than the weight printed on the outer package. I shoot for 85 grams on the bars but err on the side of "well, oops, too much chocolate isn't going to hurt". The bars can be as much as 93.6 grams. (Price remains the same as if they are exactly poured as 85 grams/3 ounces). With the tiles, I shoot for .40 oz but they can be anywhere from 14 grams up to 19 grams (0.582 oz-ish)! The tiles are a little trickier because I'm holding the mold up in the air as I'm loading it – "eyeballing" the volume. If your tiles are a little light, you'll notice a bonus tile gets popped into your bag to make up for it. PS I call my bars "Grand Adventure Bars" because, well, they ARE really grand in both size and flavor. My large bars are at least 3oz. Most other craft bars range between 1.5oz to 2.12 oz. Unfortunately for me that makes my bars look much more expensive when compared on a shelf, however if one looks at ounces to ounces, my price is about average in the craft bean to bar zone.
